zucchini casserole

you'll need:

*6 medium zucchinis, cubed
*1 red, orange, and yellow pepper, cubed
*2 medium tomatoes, diced
*1 onion, chopped
*garlic paste or 3 cloves of garlic, thinly chopped
*fresh basil leaves, thinly chopped
*1 teaspoon of dried oregano
*2 cups of cheddar cheese
*1/4 cup of parmesan cheese
*2 cups of corn flakes (crushed a bit with hands)
*1/4 cup of bread crumbs
*1 egg
*1/4 cup of olive oil
*salt and pepper to taste

1. In a big bowl, combine together zucchini, peppers, tomatoes, onion, garlic, basil, oregano, cornflakes, breadcrumbs, egg, olive oil, salt and pepper. Leave the mixture in the fridge for 20-30 minutes.
2. Preheat oven to 375 degrees and grease a 9 x 11 inch pan.
3. Take out mixture, and add 1 and 1/2 cup of shredded cheese. Mix well and spread in pan.
4.Bake in the oven for 20 minutes.
5.Take casserole out of the oven, and sprinkle the top with slightly crushed cornflakes. Spread the rest of the cheddar cheese and parmesan on top.
6.Put the casserole back in the oven for another 20 minutes, or until the top is golden brown.
7.Sprinkle the top of the casserole with some ground pepper.
